Avocado & Tomato Burger
 
  • 4 fresh wholemeal buns
  • 500g lean steak mince
  • 1tsp Dijon mustard
  • 1 roughly chopped onion
  • 1 Avocado – diced
  • 2 Tomatoes chopped and deseeded
  • 1 bunch of coriander – roughly chopped
  • Olive oil
  • Salt and Pepper to season
 
 Al Fresco Dinner Set 
  • Throw your mince, mustard, half your onion and a pinch of coriander into your mixing bowl and stir to combine. Then get in there and use your hands to make four even sized patties, season and set to one side.
  • Now for the salsa. Add your avocado, tomatoes, onion and coriander into a bowl and mix it all up. Then add the juice and zest of one lime and a drizzle of olive oil. Give it one more stir and set aside for a couple of hours to let the flavour develop!
  • Now for the easy part. BBQ or grill your burgers for 5-6 minutes on each side until they are cooked.
  • Slice and lightly toast your buns on both sides and place a patty on each. Then grab a wonderful scoop of your vibrant salsa and add it on top, then pop on your top bun and chow down!
Alternatively you can serve this with a green salad and fresh lemonade or, triple cooked chips if you’re feeling really naughty!
