Summer crunchy salad - Halloumi, fennel, apple & walnuts

Summer Salad
  • Juice of 1 lemon
  • 2 small red apples
  • 2 bulbs fennel thinly sliced
  • 2 handfuls walnut halves
  • 220 g Halloumi cheese
  • 2 handful garden peas
  • Extravirgin olive oil
  • Salt & pepper

  • First part: the dressing! Squeeze the lemon into a bowl and add 50 ml of olive oil (about 1/4 glass). Season well with salt & black pepper and mix it up!
  • Boil the garden peas;
  • Chop the fennels and put them in your juicy dressing sauce, do the same with your thinly sliced apples and the walnuts. Leave them in the bowl by the time the garden peas will be ready;
  • Place the fennels, the apples and the walnuts on a large serving plate; top them with the grilled Halloumi cheese and the garden peas.
  • Decorate with fennel leaves and walnuts.
  • The best way to serve this fresh, crunchy salad is pairing it with a large glass of white wine or Rosé. Enjoy!.
